Mercimek Salatasi / Linsensalat

Zutaten : 300 g Linsen, 1 Zwiebel, 1 Bund Petersilie, 2 EL Olivenöl, 3 EL Essig, 1 TL Senf, 1 TL Zucker, 1 rote und 1 grüne Paprikaschote.

Die Linsen über Nacht in Wasser einweichen. Mit frischem Wasser kochen bis sie kernig weich sind. Die kleingehackten Zwiebeln und die Paprikaschoten in eine Salatschüssel geben. Danach mit Essig, Öl, Salz, Zucker, Senf und Pfeffer verrühren. Die Linsen und die fein gehackte Petersilie dazugeben und alles gut mischen.
